Chives & Cheese Scones


Baking can be intimidating. If you want to try it out, this scone recipe is a good one to start with. It is deliciousness! Great for afternoon tea. I made these first as part of an afternoon treat. I am not sure how Sunil, my husband, and I got into our daily afternoon tea breaks, but I look forward to it everyday now.  I guess we were just looking for a reason to cook, eat, and not work! 🙂 Plus, we love doing our daily crossword puzzle from a book or the Evening Standard newspaper as part of this tea break!

I initially thought scones must be so much work, why would someone make them. Ha, but after making them, you realize how quick it is (albeit not the most healthy due to the butter). After making scones a few times now, I can say from fstart to finish, you can make them in about 20 minutes. Again, with scones you can experiment with all sort of flavours, like onion and parmesan, potato & olive, or just keep them plain and let the jam and clotted cream do all the work. Here is a recipe chives and cheese one.

Total time 30-32 minustes; Makes 10-12:

2 cups self-raising flour; few pinches of salt; 30g butter, chopped; 1/2 to 2/3 cup of grated hard cheese (ex: parmesan, cheddar, or mix), 1/2 cup water; 1/2 cup milk;  3 tbsp of chopped chives; some more grated cheese to sprinkle

1. Preheat oven to 201C or 415F. Lightly oil spray the oven tray.

2. Sift flour and salt into a bowl. Rub in the butter using your fingertips. Stir in cheese and chives.Make a well in the middle and add all the milk and slowly add in water as you need it to make it a soft dough.

3. Knead dough until smooth. Roll out dough to 2cm thickness. Use a floured round cutter(4-5 cm) to cut out scones.

4. Place them on the oiled tray. Sprinkle with grated cheese. Cook for 10-12 minutes or until cheese is golden.
