Best Guacamole Ever!

I discovered this guacamole version when I was visiting a friend in Boston two years ago. We just wanted to have a quick snack with a dip. I started with just chopping ingredients that were in the fridge. And it soon became guacamole! The texture, taste, and appearance was just perfect. Since then, it has become the signature guacamole I have always made for my family and friends.

When my husband and I were dating last year, he decided to intervene while I was making my guacamole and added garlic to my mix!!! I had to throw him out of the kitchen. Trust me,  no garlic is needed…all the ingredients are there to give it an all rounded taste. 🙂 Even today, he still tries to sabotage my guacamole by putting garlic in it when I am not looking!

The recipe does not use any secret ingredients, the secret is in using fresh ingredients AND finely chopping all of them. Traditionally, guacamole is made by mashing the ingredients together. It does make a difference.

Serves 2-3 / Total time 5-7 minutes

1 firm-ripe avocado
2 small to medium tomatoes
1/2 small onion
1/2 – 1 fresh jalapeno pepper or 1 small green chilly (depends on how much fire you want!) or 6-10 sliced pickled jalapeno peppers
handful of fresh coriander leaves
1 tsp of lemon juice
Salt and black pepper to taste

1. Finely chop the vegetables and mix with rest of the ingredients. Serve with tortilla chips!

Let me know what you think of this simplified, tasty guacamole! 🙂 This works great for a dinner party or as an extra side for your mexican dishes.
