Savoury Crepes


This is a savoury crepe that I made under 10 minutes. You can make it so many different ways. I used the ingredients that I had in my fridge with a special chutney that I made after dreaming about it the night before.

Crepes Mix (Makes about 6):

1 cup plain flour ; 2 Eggs; 1/2 cup milk ; 1/2 cup water; 1/4 tsp of salt; (can add 1tbsp of melted butter, optional)

1. In a mixing bowl, whisk eggs and flour. Slowly add in water and milk. Add salt and whisk until smooth. Keep aside.

Filling

The filling was made with sautéed courgettes, yellow and red bell peppers, spinach, and cheese of your choice. Again, you can any of your favourite veggie for the filling. Just chop and sautee for a few minutes with salt and pepper. Keep aside.

Putting it all together:

1. Heat a  frying pan over medium high heat. Pour 1/6 of the crepe batter onto pan. Tilt the pan with a circular motion so that the batter coats the pan. Cook for about 2 minutes (until light brown) and turn.

2. Spread about 1tbsp of chutney on the crepe and spread portion of your sautéed veggies on one half of the crepe. Sprinkle with some grated cheese and fold the other half of the crepe over the veggies.

3. Flip the crepe once more for a crisper finish. Enjoy!
